Encyclopédie des fromages

Je fais partie de ceux qu'on ne retient pas devant un beau plateau de fromages. Les manuels de savoir-vivre indiquent qu'on ne doit se servir qu'une fois, pour ne pas laisser penser à la maîtresse de maison qu'on aurait assez mangé avant cela. Peu m'importe : je fait honneur à l'affinage bien mené, à la variété bien pensée, à l'équilibre dosé. Et je me ressert, plutôt deux fois qu'une.
Avec cette encyclopédie là, j'ai de quoi me mettre en appétit, et, surtout, savoir de quoi je parle lorsque je me rends chez le fromager. Un livre indispensable lorsque, bien qu'aimant la cuisine bien faite, on est prêt à considérer le plateau de fromages comme le clou d'un dîner...
